Famed Argentinean chef Francis Mallmann will kick off a state-wide cooking class tour at the Dallas Central Market from 6:30 to 9 p.m. Monday.

The “Seven Fires/Three Winds” cooking class will teach students how to make a variety of grilled dishes and pair them with appropriate wines from the Banfi Vineyards line, including Burnt Carrots with Goat Cheese, Parsley, Arugula & Crispy Garlic Chips Salad with Trivento Torrontés Select wine; Whole Boneless Rib-Eye with Chimichurri served with Patagonian Potato Galette with Trivento Malbec Select wine; and Burnt Oranges with Rosemary with Trivento Pinot Noir Select wine.

Mallmann has three restaurants in South America. He was born in Patagonia and trained in top restaurants in France, but now focuses on his open fire creations.

The $70 class also includes a copy of Mallmann’s new cookbook, “Seven Fires: Grilling the Argentine Way,” which focuses on using a variety of open fire cooking techniques for the home grill.
