With temperatures in the 100s all this week, we don’t want to step outside if we can keep from it. But, you might want to swing by The Mercury for a summer special: the watermelon salad.
Now through Friday, the restaurant offers the complimentary dish when you buy two dinners. Customers must make reservations online through Open Table.
The salad features sous-vide prepared watermelon, compressed to create a more powerful flavor. It comes topped with heirloom tomatoes, prosciutto, blue vein cheese crumbles and a balsamic glaze.
It has been a top-seller since Chef Chris Ward added it to the menu last year.
