A new restaurant, Soleo Mexican Kitchen, is moving into Hillcrest Crossing at Hillcrest and Northwest Highway. Owner Lupe Rodriguez says it should open in the next four weeks.

The menu is small, she says, but includes a diverse selection of steak, fish and vegetarian options that are Mexican style – as opposed to Tex-Mex. The owners come from the local chain El Paisa, a fast-casual concept with several locations around Dallas-Fort Worth. Rodriguez says that Soleo will be more of an upscale atmostphere with a full bar and outdoor seating.
