Jay Jerrier is a pizzaioli who operates a la guerilla: He rolls his wood-burning oven on wheels to wherever he’s called, setting up shop to fire some Neapolitan-style pies with cracker-thin crusts and imported Italian toppings. He and his Il Cane Rosso crew take their pizza seriously —  in fact, they follow guidelines set by the Associazone Verace Pizza Napoletana. In short, he makes really, really good pizza.

If you haven’t sampled Jerrier’s creations, swing by Chocolate Angel at Preston and Forest starting this week. He’ll be there with his mobile oven Thursday, Friday, and Saturday afternoons from 5 until the dough is gone. You can preview the menu he’s offering here.

And FYI, Chocolate Angel is BYOB. Jerrier, who cut his teeth at Times Ten Cellars in East Dallas, will give a 10 percent discount on Thursdays to anyone who brings in a bottle of wine from there.
